How do you make pancakes that are easy to fill?
Thin pancakes need a smooth, runny batter and an evenly heated pan. Pour in a small portion and tilt the pan so a thin layer covers its base. The first pancake shows how much batter and heat suit your pan. Prepare the fillings ahead so you can serve each one as it is ready.
From batter to rolled pancake
- Whisk 125 g flour, 1 large egg, 300 ml milk and 2 tablespoons cold water until smooth. Set out a little oil for cooking and jam, soft cheese or lemon for serving.
- Warm the pancake pan over medium heat and oil it lightly. Add a small ladle of batter and tilt the pan to spread it.
- When the top is no longer runny and the edge releases, slide a spatula underneath and turn. Cook the other side and transfer to a plate.
- Stir the batter before the next pancake. Use less if the first was too thick, or lower the heat if it darkened quickly. Fill and roll the cooked pancakes.
Choose between Fashion’s 25 and 28 cm pancake pans according to your hob and preferred pancake size. The low edge leaves room for a spatula; a larger pancake also needs more turning and serving space.
Why does it tear when I turn it?
You may be turning too soon. Wait until the top no longer runs and a spatula can slide under it easily in several places.
Which size should I choose?
The 25 cm pan may suit a smaller cooking zone, while 28 cm gives room for a larger pancake. Check your hob’s recommended cookware size as well as your plates.
