The moment the pancake turns over in one piece

The only genuinely nervous part of making pancakes is the turn. If the pan has high sides, the spatula catches on them, the batter creases, and by the second one you have given up on a neat shape. This 25 cm pancake pan is flat so that the movement works: the cooking surface measures Ø25 × 1.5 cm, which means the spatula has nothing to climb over.

Why a pancake pan is not a frying pan

A frying pan gets high sides so juices stay in. For pancake batter that is a drawback: the steeper the wall, the thicker the edge of the pancake becomes and the harder it is to reach underneath. On this pan the wall barely rises, the surface stays in one piece, and the batter runs out on its own from the centre to the rim.

A 25 cm diameter is the size of the classic pancake folded onto a plate. It is wide enough for the batter to spread thinly, and still easy to handle when you are making ten of them one after another.

How it looks, and how it sits in your hand

The Fashion by Berlinger Haus kitchen line is matt in finish and minimalist in shape, and on a flat pan that shows especially clearly, because there is nothing to hide behind. The body is forged aluminium and the handle continues the same line where the cooking surface ends.

The handle is 20 cm, ergonomic and soft to the touch, and it stays cool while you cook. When making pancakes that matters, because you lift and tilt the pan repeatedly to let the batter run around it.

TitanPro coating: the batter lets go on its own

A TitanPro non-stick coating went onto the cooking surface: the brand's own hard-wearing coating. With pancakes the visible benefit is that the edge of the batter does not catch, and you do not have to trickle oil under the spatula to get the pancake off in one piece.

Turning in a single movement

The low rim and the non-stick surface together are what let you flip the pancake in the air with a flick of the wrist rather than lifting it with a spatula. If that is not your thing, the flat shape still helps: you can reach underneath from any side.

Turbo induction base for even browning

With pancakes you see uneven heat immediately: the middle goes dark brown while the edge is still pale. The pan is built with a turbo induction base, engineered for even heat distribution, so the pancake takes on an even colour.

Care

  • Let the crêpe pan cool down before you run water into it.
  • Hand-warm water and a soft sponge deal with it; the pan is easy to clean.
  • Use a wooden or silicone spatula rather than metal, to protect the coating.
  • Soak dried batter in lukewarm water and then wipe it away.
  • When storing, put a cloth between the pan and anything stacked on it so the surface is not scratched.

How big is the cooking surface?

The cooking surface is 25 cm across and 1.5 cm deep, and the handle is 20 cm long. That is the size of a classic pancake folded onto a plate: wide enough for the batter to spread thin, and still comfortable when you cook ten in a row.

Why is the rim so low?

Can I use it on an induction hob?

What should I turn the pancake with?

A wooden or silicone spatula. Metal tools cut into the TitanPro coating, and it is the state of that coating that decides whether the batter releases by itself. Treated this way the pan stays as it was when you bought it.
