A larger pancake, with room for the filling

On a pancake cooked too small, the filling ends up where you do not want it: running out at the edges as you roll it. A 28 cm pan solves that. More batter spreads across it, so the soft cheese, the cooked mushrooms or the jam stay in the middle while the edges meet above them.

What the extra three centimetres do

The difference between 25 and 28 cm sounds small, yet it is clearly felt on the cooking surface. Folded into quarters a pancake still fills a plate, and rolled up it gives you a thicker cylinder that the filling actually fits into. If you like paper-thin, crêpe-style batter, this is the size that gives it room.

The shape stays just as flat as on its smaller sibling. That is the point: the wall barely rises, so a spatula reaches under the batter from any side and the edge of the pancake does not thicken against a steep wall.

The wider surface shows in the pace as well. Bake ten pancakes over an afternoon and you need fewer of the larger ones to fill the same dish, and the batter spreads out thinner across the bigger disc.

How it looks, and how it sits in your hand

The Fashion by Berlinger Haus kitchen line is matt in finish and minimalist in shape. The body is forged aluminium and the surface is one smooth disc with nothing to break the eye. The handle continues the same line where the cooking surface ends.

The handle is 20 cm long, ergonomic, soft to the touch, and it stays cool while you cook. On a wide, flat pan that length gives you the leverage to tilt it while you swirl the batter around.

The cooking surface has been given a TitanPro non-stick coating, the brand's own hard-wearing coating. On a larger pancake the value is that the edge of the batter does not catch either, even though it is thinnest there and tears most easily.

Turning a bigger pancake

The larger the pancake, the more it matters that it turns in one piece. The low rim and the non-stick surface together allow the flick of the wrist, and a spatula works comfortably too, because there is nothing to go around at the edge of the pan.

Turbo induction base for even colour

On a wide cooking surface it shows quickly when heat only rises in the middle: the centre of the pancake browns while the edge stays pale. The turbo induction base is engineered for even heat distribution, so the heat from the hob reaches the edge of the surface as well.

Five hob types, with one caveat

It works on induction, gas, electric, vitroceramic and halogen hobs. With the larger size, though, check how big the largest ring on your hob is, so the 28 cm base has room to sit.

Cleaning, even after the tenth pancake

The pan is easy to clean. Dried strips of batter come off with warm water and a soft sponge, with no scouring agent.

Care

  • Wait until the pan has cooled, and only then run water onto it.
  • A soft sponge and warm water will wash it; the pan is easy to clean.
  • Turn with a wooden or silicone spatula so the TitanPro coating is not scratched.
  • Soften dried strips of batter in lukewarm water, then wipe them off.
  • When storing, keep the flat pan on top of the frying pans with a cloth in between.

Who this size suits

Who is the 28 cm pancake pan a good choice for?

Anyone who likes generously filled pancakes to roll or fold into quarters and cooks larger family batches at once. Check the largest ring on your hob before buying: the 28 cm base overhangs a smaller ring, and the edge of the pan then does not get enough heat. In a smaller kitchen, and for thinner pancakes folded onto a plate, the 25 cm size is easier to handle.

How big is the pan?

The cooking surface is 28 cm across and the handle is 20 cm long. This size gives you room for a generously filled pancake, rolled or folded into quarters, and for the paper-thin crêpe-style batter that spreads all the way to the edge.

Will it fit my hob?

You can use it on induction, gas, electric, ceramic and halogen hobs, but choose the largest zone for a 28 cm base. Measure the free space before you buy: if the base overhangs the zone, the rim of the pan gets less heat and the edge of the pancake stays pale.

What is the difference between the 25 and 28 cm?

Both are flat pans with a TitanPro coating and the same 20 cm handle. The 28 cm gives you a wider pancake that holds more filling, and fewer rounds to fill the plate; the 25 cm takes up less room on the hob and is easier to handle in a small kitchen.

Can I use it for savoury dishes?

Yes. The flat surface is just as good for a tortilla, a thin omelette or a savoury filled pancake. You can roll the omelette and slice it, and reheat a ham and cheese or mushroom pancake on the same surface.

What should I turn with?

A wooden or silicone spatula. Metal cuts into the TitanPro coating, and the state of that coating decides whether the batter releases by itself. Once you get the knack, the low rim also lets you flip from the wrist, with no spatula at all.
