Food does not fry in a crowded pan, it steams. Slide four cuts of meat in on top of one another and the juices cannot evaporate, so everything ends up looking boiled. This 28 cm pan solves exactly that: it gives you enough surface for the ingredients to sit beside each other rather than piled up.

What you do with the extra surface

The 2.4 litre pan has a 28 cm cooking surface and 5.2 cm sides. That means four fried eggs fit at the same time, a whole fish fillet lies down lengthways, and the potatoes do not have to be fried in two batches. A Sunday breakfast or dinner for four is finished in a single round.

The 5.2 cm rim is cut for that larger surface. It is high enough to keep vegetables in while you stir and to hold a juicier one-pan dish, but not so high that the frying pan turns into a pot.

A large pan with a quiet presence

A 28 cm pan is hard to hide in a kitchen: if it stays on the hob, it becomes part of the view. Fashion by Berlinger Haus therefore gave it a matt finish and a minimalist style, with no ornament and no glossy detail. The body is forged aluminium, the wall curves evenly, and the handle grows out of the same line where the pan ends.

The 20 cm handle is ergonomic, soft to the touch, and it stays cool while you cook. On a bigger, fuller pan that is not a detail: the grip has to feel secure even as you lift the whole thing towards a serving dish.

A TitanPro non-stick coating works on the cooking surface: the brand's own hard-wearing coating. On a large pan that has a particular value: you can turn the pieces at the edge without scraping underneath, and the rim of the surface does not become stickier than the middle.

Turbo induction base, so the edges cook too

The wider a pan, the more obvious it becomes when heat only rises in the middle. That is why it has a turbo induction base: the patterned plate takes the heat from the ring of the hob and is engineered for even heat distribution, not heating only directly above the ring.

Easier to wash than its size suggests

The pan is easy to clean. Because of the non-stick surface, the residue comes out of the cooled pan with warm water and a soft sponge, and there is no need for a scouring agent after frying.

Care

• Let it cool before running water into it; a large surface cools more slowly than a small pan.
• A soft sponge and warm water are the usual dose; the pan is easy to clean.
• Turn food with a wooden or silicone spatula so the non-stick coating is not damaged.
• Soak burnt-on residue in lukewarm water rather than scraping it with metal.
• When storing, keep the large pan at the bottom and put a cloth under anything stacked on it.
