A larger pancake, with room for the filling

On a pancake cooked too small, the filling ends up where you do not want it: running out at the edges as you roll it. A 28 cm pan solves that. More batter spreads across it, so the soft cheese, the cooked mushrooms or the jam stay in the middle while the edges meet above them.

What the extra three centimetres do

The difference between 25 and 28 cm sounds small, yet it is clearly felt on the cooking surface. Folded into quarters a pancake still fills a plate, and rolled up it gives you a thicker cylinder that the filling actually fits into. If you like paper-thin, crêpe-style batter, this is the size that gives it room.

The shape stays just as flat as on its smaller sibling. That is the point: the wall barely rises, so a spatula reaches under the batter from any side and the edge of the pancake does not thicken against a steep wall.

The wider surface shows in the pace as well. Bake ten pancakes over an afternoon and you need fewer of the larger ones to fill the same dish, and the batter spreads out thinner across the bigger disc.

It works on induction, gas, electric, vitroceramic and halogen hobs. With the larger size, though, check how big the largest ring on your hob is, so the 28 cm base has room to sit.

Cleaning, even after the tenth pancake

The pan is easy to clean. Dried strips of batter come off with warm water and a soft sponge, with no scouring agent.

Care

• Wait until the pan has cooled, and only then run water onto it.
• A soft sponge and warm water will wash it; the pan is easy to clean.

• Soften dried strips of batter in lukewarm water, then wipe them off.
• When storing, keep the flat pan on top of the frying pans with a cloth in between.
